Tutorial for SINGLE PORTION using microwave:

  1. OIL or spray a baking ramekin (4.5 – 5” diameter, I use glass Pyrex dishes as pictured above).
  2. In small-medium bowl, WHISK together:
  • 1 large egg
  • 2 TBSP water (If using Love My Buns with the best before date of Sept 26, 2019, November 30, 2019, or February 20, 2020 use HALF the recommended amount of water, use HOT water, and let the mixture sit for a couple of minutes to thicken up before adding the vinegar or acid; different sources of coconut flour have very different properties, apparently!)  
  • 2 level TBSP (19g) LoveMyBuns baking mix and whisk until combined.
  1. ADD 1 tsp. vinegar or lime or lemon juice. Working QUICKLY, whisk to combine.
  2. Working QUICKLY, use rubber spatula to transfer mixture into oiled ramekin.
  3. Microwave: On high for 2 minutes, or until top is fully cooked and springs back when you touch it. (be careful:  IT IS HOT!)
  4. Using oven mitts, remove the bun onto cooling rack by flipping over the ramekin and give a little shake to loosen.  Bun should fall right out.  Be careful, there will be lots of steam.  Let cool before slicing.

Recipe can be multiplied to make several at once.

ALSO, you can sprinkle a little ‘Everything Bagel seasoning on them to make them a little more interesting and savoury-tasting.

Tutorial for TRIPLE BATCH using microwave:

When you are looking for a slightly more substantial thickness (like for a burger bun), make this triple recipe but divide into two instead of three. 

  1. OIL or spray a baking ramekin (4.5 – 5” diameter).
  2. In small-medium bowl, WHISK together:
  • 3 large eggs
  • 1/3 cup water (If using Love My Buns with the best before date of Sept 26, 2019, use HALF the recommended amount of water and use HOT water; different source of coconut flour has very different properties, apparently!)  
  • 1/3 cup LoveMyBuns baking mix and whisk until combined.
  1. ADD 1 TBSP vinegar or lime or lemon juice. Working QUICKLY, whisk to combine.
  2. Working QUICKLY, use rubber spatula to transfer mixture into oiled ramekins.
  3. Microwave: On high for 4-5 minutes, or until tops are fully cooked and spring back when you touch them. (be careful:  THEY ARE HOT!)
  4. Using oven mitts, remove the buns onto cooling rack by flipping over the ramekins and give a little shake to loosen.  Buns should fall right out.  Be careful, there will be lots of steam.  Let cool before slicing.

RECIPE VARIATION:

You can bake these as two instead of three and they will be a little thicker, perfect for burgers!  They make an extra minute or so in the microwave.
