Yields 6. Preheat oven to 450F.
In a bowl:
-3 large eggs
-1/4 cup H2O
-3 TBS sugar or granulated sugar substitute
-2 TBS oil
-1/3 C Love My Buns baking mix
-2 TBS cocoa powder OR 2 tsp cinnamon and a dash of ground clove
Whisk until combined and thickens up.
Spray your doughnut pan really well, add 1 TBS apple cider vinegar to batter and whisk, and divide into your pan.
Place in top third of your oven, drop temp to 400, bake 7 minutes, turn off and leave in oven another 5. Remove from pan and let cool before glazing.
GLAZE: in a double boiler over barely simmering water melt 2 oz unsweetened chocolate and 4 TBS sugar or granulated substitute and whisk occasionally until melted. Remove from heat. Add 1/2 of a stick of room temp butter and whisk until combined and glazey. Dip cooled doughnuts and enjoy!
